Chinese Beef Pancakes

Instructions

    Make the Dough: Combine 4 cups flour, 1 1/4 cups water, and 2 tsp salt in a deep bowl to form dough. Knead until soft and smooth (sides of bowl and hands should become clean).

    Let Dough Rest: Divide the dough into 10 equal portions. Using a pastry brush, coat each piece with oil. Cover with clingfilm or damp towel. Leave to rest for 20 mins.

    Prepare the Beef: Combine the ground beef, 1 tbsp water, mirin, soy sauce, ginger, and 1 tsb salt in a bowl. Swirl constantly in the same direction until no more liquid can be seen.

    Divide Filling: Divide the meat into 10 equal portions. Set aside.

    Make the Oil-Based Dough: Leaving the 3 tbsp flour in a bowl, heat up 3 tbsp oil in a pan until it smokes. Pour oil onto the flour and stir well until it forms a pasty-dough base. Add in extra oil (non heated) as needed to slightly loosen base to make it spreadable.

    Assemble the Pancake: Take one piece of dough. Using fingers, flatten it into a roughly tennis racket shape. Dough should be even thickness all around. Brush the flour and oil mixture all over.

    In a bowl or small cup, combine the sichuan pepper, cumin, white pepper, and salt. Mix to combine thoroughly then sprinkle over the dough.

    Place one portion of meat at the larger head of the pastry. Top with chopped green onions. Sprinkle green onions over the rest of the dough as well.

    Wrap the meat with the outer part of the pastry, then roll the doll into a cylinder shape.

    Stand the cylinder on one end and press it down with fingers until about 1 cm in thickness.

    Fry the Pancake: Heat up enough oil to cover the bottom of the pan and place pancakes into pan. Cover with lid and cook over medium heat. Turn the flatbread over when the first side becomes golden brown.

    When the second side is done, transfer the flatbread onto a plate lined with kitchen paper to absorb any excess oil. For extra crispness, put in air fryer and fry at 325* F for an additional 12 minutes. Serve warm.

    Notes: Meat seasoning can be adjusted to taste. Spice seasoning can also be adjusted as desired (i.e. addition of chili powder, garlic powder, etc.)
