    prep: start with boiling your water. heat a sauce pan with a littlle olive oil medium low heat.

    chop your herbs just a nice rough chop. juice your lemons, cut the cucumber into bite size peices, halve the tamatoes, roughly chop the garlic and shallots.

    clean the shrimp (if not already clean) devain and take of the tail. once cleaned put the shrimp in the heated oiled pan season with salt and pepper and a little bit of garlic. cook for 5-8 minutes of until pink and slightly firm

    once the water is a boil throw in a pinch of salt the put the orzo in stir occasionally. watch testing every so often.

    bonus to take this to the next level: take your olive oil heat it in a pan and through in your herbs and some garlic and just let that get to know each other for a couple minutes put to the side and let cool.

    once cooled mix with lemon juice season with salt and pepper set to the side

    now that the orzo has finished cooking drain off the water, then place in a big bowl toss with the vinaigrette while warm the pasta will absorb it and it will be even better

    top the orzo with the veg crumble the feta over i like to add a bit of arugala

    then serve and enjoy also the seasoning measurments dont matter you need to season to you liking.

  • 1/2 cup Olive Oil
  • 2 Teaspoons Salt
  • 2-3 cloves Garlic
  • 1/2 Teaspoons Black Pepper
  • 1 shallots
  • 1 1/2 grape Tomato
  • 2 Lemons
  • 6 1/2 Cups Water
  • 1 cucumber
  • as much as you desire Feta Cheese
  • 3-6 sprigs Mint
  • 3/4 lb Shrimp
  • 1/4- 1/2 Kalamata Olive
  • 2 teaspoons italian seasoning
  • 1- 1 1/2 Lemon Juice
  • 1-2 sprigs rosemary
