Creamy Parmesan Fish

    Set oven rack about 6" from heat and preheat the broiler. Line a baking sheet with foil. Lightly coat with 1 tsp. butter. Lay fish in single layer on baking sheet. Mix all other ingredients except panko in a bowl and set aside. Broil fish about 7-8 minutes until it flakes with a fork. Remove fish from oven and spread mayo mixture evenly on each fish. Top each fish with panko. Return to oven and broil 2 minutes more until topping is bubbling and lightly brown. Serve over rice with steamed vegetables.

  • 1/4 C Parmesan Cheese
  • 1/3 C Butter softened
  • 1/4 C Mayonnaise
  • 1/4 C Chopped Green Onions
  • 3 Tbsp. Lemon Juice
  • 2 tsp. Dill (optional)
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 1/2 C Panko
