BBQ Jerk Chicken with Vegetables

    Heat frying pan to medium with oil.

    Cut chicken breasts into thin strips. Add to the pan and fry.

    While the chicken cooks, chop capsicum, carrots, mushrooms and onion into small pieces.

    Once the chicken is cooked through, remove from pan and place in an oven-safe shallow bowl. Drizzle Jerk Sauce on the chicken strips, then leave to marinate in the oven on low temperature.

    Fry the chopped vegetables in the pan. Add additional oil if necessary.

    Once mushrooms are lightly blackened, remove from pan and add to the chicken in the oven. Continue frying the other vegetables until the carrot is slightly crunchy.

    Add the mushrooms and chicken back into the pan and fry together until chicken is browned on both sides. Season with white pepper and parsley.

    Remove from pan and serve with salad leaves.
