Instructions

    1. Separate the cookie and cream of the Oreos. Place the cookies into a Ziploc bag and crush with a rolling pin.

    2. Melt 1/2 cup butter in the microwave. Mix with 3/2 cup of crushed Oreos and 1/4 cup sugar. Place one teaspoon of the mixture into each cup and press down.

    3. Beat cream cheese and 1 cup of sugar in a bowl with mixer until fluffy. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, beating on low speed after each addition.

    4. Using a spoon, carefully ladle mixture into the cups. Bake for 10-15 minutes and keep checking if it is set. Don't overcook it!! Remove from oven and leave to cool.

    5. Cut peaches into slices. In a large pan, melt together butter and sugar on medium heat. Add peaches to the pan and cook for about 5 minutes until caramelized.

    6. Check if mini cheesecakes are cool. To each one, add a slice of peach and ladle some caramel on top. Let fully cool and serve 2-3 at a time.
